Summer is here and all of the backyard barbecues and picnics are in full swing. If you’re getting ready for outdoor entertaining, this healthy Grilled Corn Summer Salsa can be on your table in no time!

Grilled Corn Summer Salsa is a perfect appetizer to bring to a picnic or barbecue because it does not matter if it sits out for awhile. The robust flavors meld together and taste even better as they set, plus it makes such a pretty presentation with the bright, summery rainbow colors.
Grilled Corn Summer Salsa is a light, healthy and fresh side dish that can be eaten so many ways:
- As an appetizer with tortilla chips
- On tacos: my personal favorite is to use on top of grilled shrimp tacos {yum!}
- Pair it with a piece of grilled chicken or steak as a healthy side dish.
Basically, it’s an explosion of flavors in your mouth. Grilling the corn brings out it’s sweetness and then you add a little kick with the zesty spices. Man, these pictures are making me wish I still had some more Grilled Corn Summer Salsa left to eat.
Grilled Corn Summer Salsa Ingredients:
- Fresh, Grilled Corn {grilling the corn pulls out all of it’s natural sweetness}
- Red Onion
- Tomatoes
- Bell Pepper
- Cilantro
- Lime
- Zesty Spices
- Jalapeno {Optional}
How to Grill the Corn:
Since Mr. Sweet Southern Oaks is still at his temporary duty assignment, I didn’t grill the corn outdoors. When I was telling him about making this for the blog, he said “That sounds great – do you know how to use the grill?” Ha! I’m sure his imagination was thinking that I’d burn the house down trying to turn on the grill. 😉 Instead, I used an indoor cast iron grill pan and it still got the job done.
I shucked the fresh corn and washed it really good. Then brushed some olive oil on each side of the corn. Next, let it char on the grill for about ten minutes – until it gets those nice, char marks on them. Once the corn is cool, cut the kernels off the cob with a sharp knife and place it into a large mixing bowl. Add the rest of the ingredients in the recipe card below and let it chill for 30 minutes before serving.

Grilled Corn Summer Salsa
Ingredients
- 3 Ears Fresh Corn Washed and Shucked
- 1 Red Onion
- 1-2 Tomatoes
- 1/2 Cup Cilantro
- 1 Bell Pepper
- 2-3 Jalapeños Optional
- 1 Tbsp Olive Oil
- 1/2 Tsp Each: Paprika, Cumin, Chili Powder, Garlic Powder, Chipotle Powder
- 1/4 Tsp Each Salt & Pepper
- 1 Lime Zest and Juice
Instructions
- Preheat grill to medium high heat. You could also use an indoor grill pan on the stovetop.
- Brush the shucked corn, onion, bell pepper and tomato with olive oil. Then grill until charred, turning the vegetables often. The corn will take the longest to grill, but the tomatoes will only take a few minutes to char. The charred bits make the salsa even more delicious!
- Once the corn is cool, cut the kernels off the cob. Chop the onion, tomato and bell pepper into a small dice. Stir to combine the corn, onion, tomato and bell pepper in a large mixing bowl.
- Add in the zest and juice of the lime, all of the spices and cilantro and then stir to combine.
- Serve with tortilla chips. Store leftovers for up to one week in the refrigerator.
